The chanterelle
The Serbian name for the chanterelle is "lisičarka" but it is also known as "lisičara", "lisičica" or "lisica". The chanterelle is an extremely variable mushroom. Many of the kinds are edible. It is one of the most prized edible mushrooms according to its quality. Its height is 3-10cm and the cap is 3-12cm in diameter. The cap is vase-shaped to irregular with a wavy and irregular margin. Its colour is changing from pale yellow and egg-yolk yellow to almost orange. The flesh is yellowish-white. The chanterelle is characterized by the pleasant, apricot-like odor and sweet flavor. It can be found from spring to autumn, mostly in June when it is warm and the soil is wet. They grow in clusters on stumps and grass, usually in coniferous and beech forests. The ways of preparing the chanterelle are various. This fungus can be preserved and sometimes dried.
